Graded to your kitchen's needs

We hold live Maine lobster in circulating seawater tanks at our Hunts Point facility and grade by weight class daily, so your order arrives sized consistently for plating, bisque, or bulk banquet service.

  • Chix (1 – 1.25 lb) — single-portion plating
  • Quarters (1.25 – 1.5 lb) — standard entrée size
  • Selects (1.5 – 2.5 lb) — banquet and raw bar
  • Jumbo (2.5 lb+) — display and whole-table service
  • Culls & split-tail — cost-managed for rolls, bisque and stock

Hard-shell vs. soft-shell

Hard-shell lobster runs heavier meat-to-shell and holds up best for shipping and steaming. Soft-shell (new-shell) lobster is available seasonally and priced lower, favored for rolls where shell splitting is easy.

Handling on arrival

Keep live lobster in its shipping container, refrigerated between 38–45°F, and use within 24 hours for best quality. Never store live lobster in fresh water or sealed airtight bags.
